What's Cookin'?


I love writing about my meal plans because it's really challenging me to create new dishes! Sometimes the recipes are winners and other times, not so much!

My husband and I love brussels sprouts, and I just found this recipe! I am very excited to try it!

Roasted Brussels Sprouts and  Cranberries with Barley 
from COOKIE + Kate
Shopping list:
1 pound Brussels sprouts
2/3 cup fresh cranberries (or 1/3 cup dried cranberries)
1/3 cup crumbled Gorgonzola or goat cheese
1/3 cup freshly toasted pecans
1 1/2 cups cooked barley
1 tablespoon maple syrup
1 tablespoon balsamic vinegar

Blackened Chicken with Cilantro Lime Quinoa

Shopping list:(an easy list)
2 Boneless Skinless Chicken Breasts
Seasoning - Paprika -Salt - Pepper - Cayenne Pepper - Onion Powder - Cumin
Olive Oil
2 cups Low Sodium Chicken Stock
1 Cup of Quinoa
Juice and Zest from Two Limes

Butternut Squash Soup
from a friend - (made this recipe last year, and it's quite delightful)
Shopping list:
Butternut squash
Onion
Nutmeg
Chicken bouillon

Saute onions and add the squash along with water. Allow the squash to soften just bit. Once it's pretty soft, toss the squash and onions into the blender (I usually add a little bit of milk to help blend it better). And blend until smooth! Place the mixture into a large pot. Add chicken bouillon, milk, pumpkin pie spice and nutmeg. :)

I will serve this with a grilled cheese, but not your ordinary grilled cheese. I will try and make one with pears and gorgonzola cheese.
